Spicy Miso Ramen (serves 4)

INGREDIENTS

  • 2 strips of thick cut bacon chopped (or 1/2 teaspoon to substitute for the bacon)

  • 6 cloves of garlic (grated)

  • 2 medium shallots chopped

  • 1” ginger sliced thin

  • 1/2- 1 teaspoon of red pepper flakes

  • 8 cups of broth (chicken or veg.)

  • 3/4 cups of coconut milk

  • 1/4 cup of soy

  • 1/4 cup of miso

  • 2-4 tablespoons of chili paste

  • Note: This is recipe is for the soup, you can add whatever else you want (ex: Assorted vegetables, protein, eggs, etc.)

DIRECTIONS

  • Cook bacon (or not, if you’re using the smoked paprika) until crisp in a pan

  • Then, add the the garlic, shallots, and pepper flakes into the pan with the bacon

  • Cook until it is caramelized

  • Add the broth, coconut milk, soy sauce

  • Whisk together,making sure that the garlic, shallots and pepper flakes are not at the bottom

  • Once you have done that, add the chili paste and miso and mix it in

  • Let it simmer for ten minutes

  • Once you’ve simmered the broth turn off the heat

  • Add ramen and any extra vegetables you want

  • Let it sit for 5-10 min til the ramen softens

  • Dish into bowls and enjoy your meal!
